Follow this recipe step-by-step and you’ll have the best chicken tikka masala in North London. Your family will love it!

Step One – Marinate the Chicken

Chicken Tikka Masala Ingredients:

Chicken Marinade

  • 500 gm of Boneless Chicken Breasts or Thighs cut into 1.5-inch pieces.

  • 400ml – Plain Yoghurt
  • 2 Tbsp – Garlic/Ginger Garlic Paste
  • 1 Tsp – Red Chilli Powder, Kashmiri Chilli Powder, Garam Masala, and Coriander Powder.
  • 2 Pinches – Black Salt
  • ½ Tsp – Cumin Powder
  • 2 Tbsp – Oil
  • Salt to taste

Chicken Preparation

Mix the chicken pieces with all the ingredients and refrigerate for at least 20 minutes. For the best Chicken Tikka Masala marinate it overnight for amazingly tender and juicy chicken.

When you’re ready to make the dish, bake the chicken for 20 minutes at 150 degrees Celsius. 

Step Two: Prepare the Sauce (Gravy)

Sauce (Gravy) Ingredients:

  • 4 – fresh tomatoes (chopped)
  • 3 Tbsp – Ghee
  • 2 – Chopped onions
  • 2 inch – Chopped ginger
  • 2 – Chopped garlic cloves
  • 2 Tsp – Coriander Powder
  • 2 Tsp – Cumin Powder and Garam Masala
  • 4 pieces – Green cardamom
  • 1 piece – Black cardamom
  • Half Stick – Cinnamon
  • 1 piece – Bay Leaf
  • 1 Tsp – crushed Fenugreek leaves
  • 100ml – Fresh full-fat cream
  • 500ml – Water

Sauce Preparation

Warm Ghee in a skillet, then fry the raw ingredients, ginger, garlic, and onions until fragrant.

Then add water and the rest of the ingredients (except Cream, Garam Masala, and Fenugreek leaves). Cook for 15 mins. Let the sauce cool down and then use a blender to blend it into a creamy, thick sauce.

Add the cooked chicken, garam masala, crushed fenugreek, and salt (to taste) into the sauce and cook it for 5 mins on medium heat, stirring constantly. Take the pan off the heat and mix in the fresh cream.
